Tasty Tuesday ~ Sweet Potatoes and Pears

This past weekend our Sunday School class decided to have Easter dinner together since most of us do not have family close by.  There were 22 of us and I did a lot of baking and cooking.  I'll probably be sharing most of those recipes here in the following weeks.  I have one for you today.  And as usual I adapted the recipe to what I had and I've tried to make it more user friendly.  Let me tell you that these are soooo yummy and they went quickly at our dinner. 


Sweet Potatoes and Pears

Ingredients: 

7-9 sweet potatoes of average size (I used 8)

1 (15 ounce) can pear halves, drained
1/3 cup packed brown sugar
1/4 cup butter, softened (depending on the amount of sweet potatoes you may use up to 1 stick of butter)
1/4 teaspoon nutmeg

Directions:
  1. Pre-heat your oven to 400 degrees (F).  Pierce the sweet potatoes with a fork.  Line a baking sheet (or two) with foil and place potatoes on the baking sheet(s).  
  2. Bake for 40-60 minutes.  I went for 45 on the smaller ones and 55 on the larger ones.  
  3. Remove and let cool to the touch.
  4. Remove the skins and put the potatoes into a mixing bowl.
  5. Add the remaining ingredients and beat together until combined.
  6. Place in a serving bowl and enjoy!

For the next two weeks I'll be getting ready for another craft fair here at a local elementary school.  It's their first and it should be a pretty good turn out so I'm pretty excited about it.

This and That

What a busy couple of weeks it has been.  I don't think I see the light at the end of the tunnel yet either.  I did my first craft fair and beat my own goal.  Of course that goal was just to break even and I did and then some!  I've also signed up to do two more craft fairs.  One next month at a local Elementary school and the other one is in June at a Business Expo and Craft Fair.  So now I've been busy with keeping the sock making going.  Hopefully I'll get the headbands going soon as well.

Sam is still doing great with school and we've signed him up to attend Connections Academy again next year.  He is still making straight A's and I just got an email from his teacher this week letting me know that he passed both of his Math and Reading TAKS tests!  WOO HOO!  Don't know the actual scores yet but just to know that he passed is fantastic!

Today I've spent the day baking and cooking.  Actually I'm still doing the baking and cooking but decided to take a small break to sit down and relax a bit.  I've made a Coconut Pie, an Easter Hunt Pie, baked some sweet potatoes for a Sweet Potato and Pear dish and I've also cooked some chicken breasts for my Chicken Noodle Casserole and for my Chicken Enchiladas.  WHEW!  It made me even more tired just to type it all out.  If you're wanting recipes keep checking back here as I'll post them soon.  Need to make sure they all come out okay first.

Tomorrow is Easter!!!  LOVE EASTER!  In fact that is why I did most of the above baking/cooking today.  Since a lot of us in my Sunday School class live away from family we decided that we'll all get together tomorrow afternoon for a big Easter dinner.  As of last count there will be 22 of us there!  WOW!  It will be a lot of fun and some great memories will be made.

Break time is over....back to the kitchen for me.

Tasty Tuesday ~ Pasta and Shrimp

Here I am again this week adapting another recipe.  Go figure.  I knew what I had on  hand and didn't want to run to the store.  So I sat down on the computer and found a recipe that was close enough to what I had and that I could, without to much trouble at all, tweek the recipe for my ingredients. And may I say that this is not a good for you recipe....but it sure was good!  We ate it for dinner last week and I must say that the leftovers were soooo good and didn't last long.


Pasta and Shrimp

Ingredients:

1 package of any pasta of your choice
1/2 cub butter
2 cloves garlic, minced
1 (3 ounce) package cream cheese
3/4 teaspoon dried basil (or fresh if  you have it)
2/3 cup boiling water
1/2 pound cooked shrimp (or a full pound should you so desire)

Directions:
  1. Boil your pasta according to it's directions. Drain.
  2. Meanwhile, melt 1/2 cup butter with the minced garlic.  Stir in the cream cheese, breaking it up with a spoon as it melts.  Stir in the basil.  Simmer for 5 minutes.  Mix in boiling water until sauce is smooth.  Stir in cooked shrimp and heat through.
  3. Toss pasta with shrimp sauce, serve and enjoy!

Tasty Tuesday ~ Chicken Noodle Casserole

I missed joining in last week but I did try a new recipe and I think my family is in love with it. I did find it online but I looked at so many and when I printed it out it didn't print the link. Not to mention that I changed it up some. It's a great base casserole and it has so much potential! We can't wait to have it again around here. In fact the leftovers didn't last long.


Chicken Noodle Casserole

INGREDIENTS:

2 cups chicken, cooked and cubed
2 cups elbow macaroni, not cooked
2 cups milk
2 cans condensed cream of celery soup
1 cup cubed processed cheese
2 cups onions, chopped

DIRECTIONS:

1. In a 9x13 baking dish combine the chicken, macaroni, milk, soup, cheese, and onions.  Mix all together, cover the dish and let it sit over night in the refrigerator.  If not overnight at least 6 hours.

2. Preheat oven to 350 degrees F.

3. Bake for 1 hour at 350 degrees F.

MY NOTES:

This may be a basic and simple recipe but don't let that deceive you.  It's AMAZING!  Feel free to change the meat, add veggies or change things up a bit.  But the main key to this recipe is letting it all sit together for at least 6 hours.  If you make this one I implore you to make it as it appears here first before you change it up.  ENJOY!
